Only the current price. If you specify worse odds then bf will automatically give you the current price instead

I believe the cross matching algorithm makes it possible in certain circumstances that money could be matched outside the best price. But it's rare and for all intents and purposes one should assume your order won't be matched until the price moves to it.

That's not possible. Cross-matched bets will take the best price available as well. If the price you ask for is unavailable then your bet shouldn't be matched.
