Export to CSV - UTF-8 encoding

Would it be possible for the CSV's to be UFT-8 encoding rather than basic csv, or to have it as a selectable option?
I use excel power query to compile the exported csv files but PQ is unable to recognise the number of columns in the csv files so everyday I have to go through each export and re-save as csv uft-8 before running the query.
