Can anyone shed light onto why some races get massive spikes in volume 2min before the off and others are 10 min or so before the off? Is it because of live covarage or the standard of race?

Depends on lots of things, the ones I can think of being quality of the race and time the previous race finishes.

Most market participants including bookies, traders, value and mug punters prefer closer to the off. The only time I could think of there being a significant volume at 10 minutes is if it's a big event or if there is a bigger gap between races like in the evening ones
