Additional Guardian Columns

Hi All. In a recent video on horse racing trading, Peter showed Guardian with more columns than the default. I'm struggling to find the way to add more columns, e.g. prices of the top 3 runners etc. and would be grateful for some help. Even better, are there layouts that that I could import? TIA
