Yes thats true, using 1£ is definitely more representative to get closer to actual.

Another reason I've put off using practice mode, is how would I actually be able to take notes from the output of the bot? (I'm being lazy here and I'm sure there is a way it can be done)

But the quickest and easiest way is using you PNL from BF and then working the profits from losses on each runner, with a certain amount you place (bet anount) which gives it an ID to that bot then, and then tying this in with your log. (Thats how I do it anyway).

But happy to understand if the practice mode can facilitate this in a way

Use your Bet History download. You don't need to tie it back to a bot rule as you're just about seeing what price, side, time ete etc is better than others.
