Is it possible to connect Guardian to an Excel spreadsheet so that the Goals Predicted value (for example) and other stored values are shown in Excel in real time along with specific market odds?

Right click on a market in the list window and select 'Export the Contents of this Market List'

That just takes a snapshot, I meant so that the excel spreadsheet updates automatically in real time. I know you can connect markets to excel, I wondered if you can add stored values into that.

Ahh I see what you mean

Yes you can do that also, you just need to enable to data (inc. stored valued) you want pushing through in your Excel settings in your main settings area
