I have been watching some of the training videos using the dutching feature on Bet Angel (mostly for horses) and Peter has the order of horses as Favourite to Outsider.
How can I change my settings to show this order?
Also I've been looking into backing the front of field but it doesn't fix my liability i.e. When the race goes in-play the red can increase or decrease... I most definitely dont want this, I'd like to fix my liability at time of dutching.

Help With Dutching Settings
I'm not sure which video your refering to but the Dutching (and bookmaking) screens both only show the order they appear on Betfair, there are no options to sort on these screens.
As soon as the bets are matched your liability is fixed, what your probably refering to is the P/L of the trade profit column changing as the odds moves, its only if you click those figures and green up will that become your P/L, if you do nothing you'll never end up with a worse liability than your initial bets
When Dutching its not normally advised to green up hence the option is turned off by default when Dutching

That video was made in the olden days when we used to have horseracing in the UK.
