Id like to create a coupon where it would be showing only races with more than 10 horses.

You can't test the number of runners at the point of market search so you'd first need to add them to Guardian then remove the ones with less than 10 runners.
There's a way you can do that quickly and easily here the only difference is you'd use a 'Number of Selections' condition rather than a 'Fixed Odds' Condition

Once you done that you can add them to a watch list and apply the coupon to it
