And what the hell does a "golf ball" of Tamarind mean. Paste? Raw Tamarind?
And assuming parboiling pork and offal would be about 20 minutes?

I've only cooked it using a jar of cook-in sauce that I got from a Goan restaurant in London, but I'll have a go at making it properly. You usually use pork belly strips. It's not the healthiest of meals but I think the fat is an important part of the flavour. It can be eaten straight away but people usually cook it a few days early and reheat it every day to improve the flavour.
I've just found a copycat recipe site. You can look up your favourite fast foods and find a recipe to cook them yourself.

Kosher salt or kitchen salt[1] (also called cooking salt, flake salt, rock salt, kashering salt or koshering salt) is coarse edible salt without common additives such as iodine.[2][3][4][5] Typically used in cooking and not at the table, it consists mainly of sodium chloride and may include anticaking agents.
fleur de sal and sea salt are less harsh than table salt. Although it may simply be down to increased surface area of fine grain table salt compared to those flakier alternatives. I use table salt for roasties and sea salt elsewhere. But I use salt sparingly anyway. Can't handle salted crisps anymore, but that might be due to the dismal quality. When I said 'normal' salt I meant sea salt. Is that a sign I've gone all middle class? Shot me now.

Is it? I always get a bit grumpy as we hit the longest day on 21st June. It's then management till 21st Dec. Evidently there''s lots of good stuff between those two dates, late summer, autumn leaves etc, but 21st june is a bit like rounding the top of a parabola.
Perhaps I'm a glass half full person.
