Is there any way I can get the matched money on each horse displayed starting from £0 from 5 mins before the race excluding any matched money before 5 mins pre off?

Yes, just store the value of the traded volume at 5mins
Then have another stored value rule triggering every refresh and storing the traded volume minus your first stored value

The second example in this post does exactly what you are after and only displays the in-play traded volume (by deducting it from the traded volume when the market was turned in-play), so it just a matter of changing the time the rules trigger to what you need
