Not sure betangel is the right tool (I've used it before for trading, very impressive). All I want is to record all the (timestamped) matched bets in a market and spew them out as plaintext so I can analyse it with other tools or my eyes. Would it be better to use betfairlightweight or something instead?

If I'm understanding that then yes, much like that. So that's pretty easy in betangel?

Yes, very straight forward that's just using a simple rules file with a Stored value rule to store the matched bets
then a Export stored value rule to export them at the end of each market

It would only get more trickier to set up if you were firing in dozens of bets each market and they were getting matched at various times etc but it is still doable

I've been exporting stored values for debugging purposes but I never thought of using the rule to produce reports. :)
