Is there a way to watchlist the match odds (1x2 or ml) markets for all currently inplay events where it's available (football, basketball, cricket, etc)?

Yes, just create a coupon and configure the filter to find the market types you mentioned

Followup questions:

1. I've created an alert in the servant manager, how do I apply it to the whole watchlist?

2. How to automatically repopulate the watchlist? I can automatically prune the list with refreshes but I'd also like to add new matching markets.

On the 'Parameters' tab of your Alert rule you can configure it to be displayed in the WL

I'm not sure what you would want to do this as the market you are already using the Servant on will be on your main trading screen so not sure how having an alert next to it in the WL would help?

I'm not trading at the moment, just want an overview of these games and alerts when certain events happen. Maybe I don't need the watchlist and the guardian will do?

From what you've described yes you could probably just create a Guardian rule to trigger the alert and also display it in Guardian in the market list area, there's an example here which might help
