Is it possible for a bot to have 2 Stored Values and if they're both hit then the trade is triggered?

Yes, you can set and use as many stored values (and signals) as you want, and add them as conditions for other rules

Stored Values can also be referenced by other markets in the same event or even different sports
Signals are confined to the market and the automation file setting them
