I'm a bit confused by the language regarding stop triggers.

It says Stop Trigger and Place at

If I wanted to ensure I didn't lose over 10% would I put 10 for both stop trigger and place? What's the difference between the two?

Pretty much as it says on the tin

One is where the bet is triggered at
the other where it is placed at

You would normally place it at a few extra ticks or percent than its triggered so it has more chance of being matched if there's a sudden spike in-price or it's a volatile market.
The larger the gap the better the chance but too large of a gap and you might need to green up again as the bet size is calculated at the price its placed at so if its then matched at a much better price the result will be an uneven spreading of the loss.

But like any bet there is never a guarantee it will be matched every time

There's an illustration in the 2nd image of this post which might help
