When double-clicking on a market in my Guardian Markets it opens the one-click interface in Bet Angel. How do I change this so that it opens the Ladder Interface instead? I've noticed that you can right-click on a market and choose the Ladder Interface but is there any way I can change this to make it the default option?

It's not something I use, but I believe you can set an automatic safety servant to open the ladder screen every time you open a new market.
