Could someone clarify whether it’s possible to set up the software to back a serving tennis player specifically when they’re facing their first break point of the match. This would be targeted at a particular game within a set.

I’ve had a quick look through the PDF manual, but I’m still unsure if this is achievable.

Yes you can do that, there is an example here which trades the break points

All you'd need to do is limit it to just triggering once
