Prepare the sauce citronette squeezing lemons and making the filtered juice in a bowl: add olive oil, salt and pepper, then emulsify the sauce with the help of a fork.

If you have not purchased slices of carpaccio, but have instead opted for a whole piece of sirloin, ask the butcher to remove each rib, cartilage or grease for getting a nice piece of thin sirloin with cylindrical shape and the final weight of 400 gr . If at home you do not have a slicer, you should cut the slices very thin with a sharp knife, place the slices in to a food storage bag and beat it with a flat kitchen hammer.
Once you cut the meat into thin slices, divide and place on four serving plates, sprinkle each dish with the sauce citronette, then sprinkle each dish with 25 g rocket leaves and 25 grams of shaved Parmesan or Grana.
If desired, you can flavor the meat with the sauce preparation, leaving it to marinate for ten minutes (or more, according to taste) in a refrigerator but without rocket and Parmesan. Proceeding in this way, however, know that the meat will lose its natural pink color giving way to the color of cooked meat.

After the marinating time, remove the carpaccio from the refrigerator, add the rocket and parmesan. Bring to the table also oil, pepper and salt, so that diners can add more seasoning to taste.
The wine should be Red, 1 max 2 years old and light. 11,5 to 12,5..Remove the wine from the bottle and let it breathe for at least 2 hours in the decanter. When wines are fruitful I personally leave it even 24 hours to let it settle

The wine should be rose' of medium body and 2 years old.
You can also have a dry white wine 1-2 years old if the seasoning will totally cover the boiled of the octopus.
alongside the octopus I would personally also add raisins or a dried fig, but do not mix it with the octopus...
