Am I missing something or is the only way to create an SP bet in Guardian to create an unmatched bet that won't match and then set 'take SP on all unmatched bets'?

Yes that's the only way.
A bet needs to be submitted before SP can be taken

Don't forget that you can put your back bets out at 1000 if you want only SP

You can calculate using stored values and use a stored value stake.

They do, but you have to use a minimum £10 liability. Also be sure do your maths right, the numbers down at 1.01 can look surprising.

Of course, I forgot the £10 liability!

Thanks for your help, all.
