Ah the age old puzzle:
How long is a piece of string?
What I mean here is there is no answer to your question. It depends what each sheet is doing. I'm not aware of a formula that takes computer specification and churns out an answer to the question 'how many spreadsheets can I use'.
The best way to find out is in practice. If your machine falls over and stops you probably have too many.
