Is there any way of getting a spreadsheet to capture prices or projected BSP's 10 minutes before the off, so I can automatically back them if they are x% higher than those prices just before the off?

Projected SP, even if a reliable estimate can be made, will be meaningless 10 minutes before the off. But if you want to capture prices at a particular point in time, you can record a simple macro which copy paste values in different column and assign that macro to a button. Then you can have another column that compares recorded prices to current.

Because of the delay in live feeds, Betfair SP is really only represents the price of the horse about four seconds or so after the off. That means you would need to predict what happens at the off. SP isn't really starting price at all unfortunately.
