I note there are a whole heap of markets on Betfair for this race starting tomorrow, but no 'Stage 1' market.

Do they do a market each day for each separate stage in this event??

The tour de France has a daily in running market per stage, so I suppose it will be the same on the Giro, I do not think the market is very liquid though.
