Thinks it relates to how the prize money is collected for each race. (entry fees+sponsors+any other) ie; Handicap Stakes, Novice Stakes, Maiden Stakes etc..

Literally, all UK races are stakes, as in sweepstakes, just like human beings are animals. But generally speaking, handicaps are not stakes races, even the ones whos name ends in 'handicap stakes'.
Perhaps the ignorance lies not with Betfair but with whoever names the races?
